Avarekalu Rice Bath is a delicious variety of classic Karnataka style veg pulao where in season fresh Avarekalu or Hyacinth Beans is added to it. It is best served with raita on the side.

About this Recipe :

Rice Bath actually needs no intro to any Kannadiga. In Karnataka, the Vegetable Pulao popularly known as rice bath and is one of the most popular dishes be it restaurants or home. Still, no one gets bored of this ” palav ” …that’s how flavorful, tasty and crowd-pleaser it is.

Karnataka style veg pulao is actually very different from the regular pulav. 

This avarekalu Pulao is almost made similar to the classic rice bath . Mild spices, fresh avarekalu , and a freshly made green masala paste is sauted along with rice and cooked to make a super delicious pulao .

It is super easy to make, very delicious, and apt for quick meal / party / lunch box / any occasion . Pair it up with some raita .. a bowl of hot flavorful pulao is all gone !!

Few Points to note while making Avarekalu Pulao :

  • This pulav is made using sona masoori rice and not with basmati rice, unlike the usual pulao. Here rice is not cooked too grainy fluffy like biryani at the same time it’s not mushy either.
  • Soak rice for about 20-30 mins. This helps in using less water while making pulao and the end result will be nice and fluffy.
  • Rice to water ratio i follow is 1: 2 / 1: 2.5. this includes even the water quantity used for grinding masala.
  • Use fresh tender Avarekalu for best taste .
  • One an add few soaked soya chunks along with hyacinth beans for extra taste.
  • The pulao may look slightly mushy when hot. But it becomes fluffy and separate as it cools down.

Avarekalu Bath Recipe with Step by Step Photos :

Wash and soak rice for about 15-20 minutes.

Meanwhile, prepare a green Masala. To a mixer jar add fresh coconut , ginger , garlic , green chillies , handful of coriander leaves and mint leaves . Add little water and grind smooth

Ground green masala paste for pulao ready . Keep aside .

Heat oil + Ghee in a pressure cooker and add bay leaf, few whole spices ( cloves , elaichi , cinnamon and star anise ) . Add jeera and saunf. Let they be aromatic .

Then add sliced onions. Saute till transparent.

Next, add the tomato pieces and saute till mushy.

Add the ground green masala , saute 3-4 mins till raw smell goes.This step is very important.

Add avarekalu

Add Salt to taste , haldi , Kasoori methi , Dhania powder

Saute for a minute.

Then drain and add soaked rice. saute for 1-2 min.

Add 3 cup water ie 1: 2 proportion. Mix and bring to boil. Taste test. The water should be slightly salty and spicy. Once pulao cooks, it will be perfect. Pressure cook for 2 whistles.

Open the cooker only after pressure is released completely. Fluff the rice gently with a fork.

Vegetable Pulao is ready. Serve with onion Raita or cucumber raita.

Ingredients
 

  • 1.5 cup  Any Rice / Sona masuri Rice
  • 2 medium size Onion, sliced
  • 1-2 medium size Tomato, chopped
  • 1-3/4  cup Avarekalu / Hyacinth Beans, fresh

To Temper

  • 1 no  Bay leaf / Tej pata
  • few Whole spices – cardamom , cloves , cinnamon , star anise
  • tsp  Cumin Seeds / Jeera
  • 1/2 tsp   Saunf / Fennel
  • 1 tsp Coriander powder / Dhania Powder
  • 1/2 tsp Turmeric Powder / Haldi
  • 1 tsp Kasoori Methi
  • 2-4 tbsp   Oil
  • 1 tbsp  Ghee
  • Salt to taste

Green Masala : To Grind

  • 2-3 tbsp  Coconut
  • 5-6 cloves   Garlic
  • 2 pc  1 inch  Ginger
  • 5-6 nos   Green chili, , Based on how spicy you want
  • few  sprigs  Coriander leaves
  • 1/2 handful   Pudina / Mint leaves
