Bitter Gourd Chips in an Air fryer
Who doesn’t like chips ? I’m sure there would not be a single hand out there that would have raised ? Here is Hot chips style “Bitter gourd Chips” made in an air fryer .. healthier way . The spicy crispies with a very very mild bitterness in it makes a great guilt free teatime snack. They are also a perfect side dish with rasam / dal etc.
What bitter gourd??!! When there are so many varieties of chips to choose from ,why this?? Didn’t I get anything else !! Ha ha.. I’m trying to visualize the faces of bitter gourd haters after the mention of my today’s recipe . But trust me, after you taste this chips, you’ll like bitter gourd at least in this form and keep on munching one by one…
You can make these bitter gourd fry by deep frying in oil too which i have shared earlier here ,but if you haven air fryer , trust me , you must try making in it . You will thoroughly love.
Ingredients required for Air fried Bitter Gourd Chips
- Bitter gourd : Bitter gourd is the hero of this dish . Use fresh medium sized bitter gourd. Wash and wipe dry to remove the moisture and then slice them into coins.
- Gram flour / Besan : Helps in binding the spices on bitter gourd slices
- Rice flour / Corn flour : Gives a crispy finish to the chips .
- Basic spices : basic spices that are used here include salt , chilli powder , turmeric, coriander powder along with amchur (dried mango powder) which makes the chips perfectly balanced. You can add little chat masala powder too .
- Oil : We won’t be needing a lot of oil like the deep fried version . Just 1-2 tablespoon, would be enough for adding flavor and some gloss.

Air fried Bitter Gourd Chips Recipe with step by step photos
- Wash bitter gourd and pat dry. Discard ends and cut into thin slices ( the slices should neither be too thin nor thick ).
- Remove the seeds and the flesh from the center like below .No need to scrape the spikes that are in the bitter gourd .
- Sprinkle a tsp of salt to the slices , mix and rub .Let they sit for 30 mins . This step helps in reducing bitterness from the bitter gourd ..however this step is purely optional.
- After 30 mins, using your palm, gently squeeze out juice out of it. This helps in reducing bitterness from bitter gourd.
- Add in turmeric, salt ,red chilli powder, coriander powder ,gram flour , rice flour and oil .
- Mix everything well.
- Sprinkle just a few drops of water , combine everything well. So that all slices are coated well with masala mixture . Don’t add more water it will make them soggy
- Meanwhile , Preheat the air fryer to 356 F/ 180 °C for 5 mins
- Arrange the slice in air fryer basket Air Fry at 356°F / 180°C for 15 mins .
- After 6-7 mins, Open the air fryer, shake the basket once and then continue cooking. You can use a spoon to mix and toss the bitter gourd slices. this helps in frying bitter gourd slices evenly.
- Fry the bitter gourd till they are nice and crispy .That’s it ,crispy bitter gourd chips are ready to enjoy.
Points to note while making Airfried Bittergourd Chips
- Make sure you slice the bitter gourd evenly so that while frying it gets cooked evenly.
- Adjust the salt and spice as per your taste preference.
- You can add little chat masala or crushed fennel for some additional flavor.
- The cooking time may vary based on the air fryer model and thickness of bitter gourd slices . Hence ,It’s better to check after 10 mins and then continue cooking. As we don’t want it to over cook and get burnt .
- You can make the same dish in your oven also. Bake at 200 C for 25 mins or until crisp. Flip in intervals and bake. Takes more time than air fryer
- You can make the same dish , by deep frying in hot oil too. I have shared that version here … you can check .
- shake the basket in between: while air frying the Brussel sprouts, shake the air fryer basket after every 5 minutes or so. This will ensure that they crisp up evenly.

- 3-4 tbsp Gram Flour / Besan
- 1-2 tbsp Rice flour / Corn flour
- 1.5 tsp Red chilli powder
- 1/2 Turmeric powder
- 1 tsp Coriander powder
- 1 Salt to taste
- 1-2 tbsp Oil
- 1-2 tbsp Water
