Ingredients required
- Foxnut – Phool Makhana / Lotus seeds are easily available in grocery stores . It kind of looks like big popcorn that’s white and round with some dark spots.
- Jaggery – we would be making a caramel using this healthy sweetener option. Organic jaggery makes it more healthy and adds a lovely color.
- Ghee – Used for roasting makhana . Helps in giving a nice crunchy taste and flavor . If vegan you can use coconut oil / any oil .
- Sesame seeds – white sesame seeds adds crunchiness and makes it more healthy.
Caramel Makhana Recipe with step by step photos
Take 2 cup of Phool Makhana / Lotus seeds.
- In a pan add a heat a tsp of Ghee . Add makhana and roast it on medium low flame for 3-5 mins . Let it get crispy
- When you pick up a makhana and break , it should be crisp & break easily . This is the indication that Makhana is well roasted .If it doesn’t, and is still little hard , you may have to roast them for few more mins. Once done transfer makhana to a bowl and keep aside.
- To the same pan add tsp ghee, white sesame seeds and fry till they splutter.
- Add Jaggery and on low flame sauté 2-3 mins.
- Let jaggery melt. If you want can add a pinch of salt.
- Add roasted makhana and combine everything well. Let They get well coated. . switch off.
- When hot, few Makhana might have stuck together due to jaggery syrup.. don’t try to separate them now. Wil be super hot. Once cool can easily break .
- Store Caramel Makhana in air tight container . When cool ,enjoy crispy Crunchy
Few Points to note while making Caramel Makhana :
- Always roast makhana well till they are nicely crispy.
- Addition of roasted peanuts or badam or sesame seeds makes it more crunchy and healthy .
- For some extra flavor , you can add a pinch of elaichi powder or few drops of vanilla essence or tsp of chocolate powder.
- If you are a vegan , and want to skip ghee , as an alternative , can use any oil or coconut oil .
