About Cornflakes Chivda recipe :
Cornflakes Chivda is a savory snack made from cornflakes , spices , peanut , cashews , raisins , curry leaves etc . Serves as a great tea time snack , low cal & guilt free snack , perfect as a diwali snack to distribute among friends .
Growing up , my mom often made these chivda but from dried corn flakes. She would deep fry them first and then use it to make mixture. To the chiwda, she would later mix some beaten rice, boondi, sev etc and the end result would beat the store bought ones.
But we being conscious and calorie watcher ( hehe.. at least we liked to be called so ) try to limit deep fried stuff as far as possible. So, here’s a quick and guilt free version that does not involve deep frying of corn flakes .Enjoy them without thinking twice about your weighing scale.Do try, I’m sure everyone will love it…whether on diet or not.
It’s a very easy, quick and healthy snack as it has very less oil. We will be using some local brand like Kwality corn flakes.
I am giving you the ingredients without the quantity. You can use according to your preference.
There is no hard rule for the measurements in this recipe. If you like peanuts more then add it more, Feel free to plus or minus the ingredients of your choice. The same holds for spice powders.
Cornflakes Chivda recipe with step by step photos :
- Keep all the ingredients ready . I usually use kwality brand cornflakes as they are light and masala gets coated nicely.
- Heat oil in a kadai .Add mustard and groundnut. Saute for 1-2 mins on medium flame . Let the mustard splutter and ground nut get crisp .
- When they crackle add few cashew pieces and dry coconut pieces ( optional ) .Fry them. When they are little crisp, add raisins. Fry till raisins get bulged .
- Add fried grams and curry leaves . Saute for few seconds . Let the curry leaves get crisp.
- Switch off the kadai and add masala one by one . Make sure the oil is not too hot while adding masala else the masala might burn. Add salt , chilli powder , haldi , hing , aamchoor powder and chat masala . If you want can add a tsp of sugar too. Combine well .
- Add cornflakes to it. Mix well. Turn on the stove and keep mixing the mixture on low flame for 2-3 mins . Let the cornflakes get more crisp.
- Taste test .Adjust the seasoning if required .
- That’s it.. our spicy crispy cornflakes chivda is ready to munch. Store in airtight container once it cools. Stays crisp easily for a month if handled well.
Points to note :
- Keep the ingredients handy before making the chiwda.
- Note that we are not deep frying the cornflakes but using the readily available cornflakes that we used as cereal . I dont prefer kellogs as they are little thick in nature , if you can get kwality or any other local variety , that would be best .
- I have given you the ingredients without the quantity. You can use according to your preference .There is no hard rule for the measurements in this recipe. If you like peanuts, add more . Feel free to plus or minus the ingredients of your choice. The same holds good for spice powders
- For extra flavor you can use little coriander powder / fennel powder / garlic / sugar/omit hing etc.Try and see which way you like.
- Before adding masala , make sure to switch off the stove and reduce the temperature of oil a bit before adding masala. Else there is a high chance , it might get burned .
- If you want , to this chiwda you can add some boondi /sev / mixture etc in the final stage.
- You can also relish cornflakes chivda with some chopped onion, tomatoes, carrot gratings etc sprinkled on them .

Ingredients
- 500 gms Ready instant Corn flakes, ( any brand ; thin variety preferred )
- 2-3 tbsp Oil
- 1 tsp Mustard seeds
- few Ground nuts
- few Cashew nuts, split into halves (optional )
- few Raisins, ( optional )
- 1/2 cup Fried gram / Chutney dalia
- few slices dry coconut, cut to small thin pieces ( optional )
- few Curry Leaves
- 1 tsp Turmeric powder / Haldi
- 1-2 tsp Red chilli powder
- 1/2-1 tsp Chat Masala
- 1/2 – 1 tsp Raw Mango Powder / Aamchoor powder-
- a pinch Asafoetida/ hing
- Salt to taste
- 1 tsp Sugar, optional
