About Moringa Leaves / Drumstick Leaves :
Drumstick leaves are very very healthy .In kannada its known as nugge soppu . They have many health benefits such as strengthening of bones, boosting immunity,good for lowering blood pressure , good for lactating mothers ,good for diabetic etc . One can include drumstick leaves in stir fry , drumstick leaves Dal , roti , adai , etc .
Major headache of these tiny leaves is separating them from the stalk . As a result many people avoid buying drumstick leaves thinking of the work involved in cleaning it . Once that is done , including it in our diet is not a problem at all True , cleaning process is a bit messy and time consuming but then end result and the health quotient deserves it. Actually there is an easy method to remove the leaves . Roll the drumstick leaves in a tissue paper/ kitchen towel and leave it in the fridge overnight/ few hours. Later you will find that most of the leaves have shed by themselves and beyond that it is easy to clean .Do try
Few points to note :
- Wrap Drumstick leaves in tissue paper or kitchen towel for few hours / overnight.. the leaves will separate easily.
- If you want your chutney to be green , use green chilli , else you can use red chilli too .
- If you don’t like Garlic , please feel free to skip .
- Addition of jaggery is optional .
- Don’t skip Hing. It adds lots of flavor .
- Use Coconut oil to roast spices. Makes the chutney more flavorful. However , if you don’t use , you can use any oil or sesame oil or ground nut oil.
- Don’t grind the chutney too smooth. Small bits of drumstick leaves here and there makes it interesting and tastier.
- Tempering the chutney towards the end is purely optional .

How to Make Drumstick leaves Chutney :
- Separate the drumstick leaves from the stalk and wash it thoroughly .
- Heat 1 tsp oil in a pan / kadai and add Urad Dal , Channa Dal and Hing. Saute on medium heat , let the dal turn golden.
- After 1-2 mins , when dal has turned crisp and golden , add sesame seeds . Continue to saute. Let sesame seeds splutter.
- Remove from heat and allow to cool.
- To the same pan , add Onion , Garlic flakes and green Chilli . Saute for 1-2 mins . Let Onions turn translucent.
- Later add diced Tomato .
- Add Moringa leaves and salt to taste . Saute for 2-3 mins on low medium flame.
- After 2-3 mins , Let the leaves wilt or shrink.
- Add a cup of water to the sauteed leaves ,cover and cook for another 1-2 mins.
- The leaves would have well cooked by now. If the leaves are under cooked , the chutney would turn bitter.
- Now , transfer the roasted dal mixture to the mixie jar and pulse them . Later add the onion tomato moringa leaves mixture to the mixie jar . Add soaked tamarind , little water and grind .
- Don’t grind the chutney too smooth. Small bits of drumstick leaves here and there makes it interesting and tastier.
- Transfer the ground chutney to a serving bowl .
Prepare a tempering . Heat oil in a small kadai . Splutter mustard and add hing , curry leaves . Pour the tempering over chutney.
- Enjoy the tasty Drumstick leaves Chutney with Hot Rice / Roti / Ubbu Rotti / Dosa etc.

Ingredients
- 2 cup Drumstick Leaves, fresh
- 1.5 tsp Urad Dal / split white dal
- 1.5 tsp Channa Dal
- small piece Hing
- 1.5 tsp White Sesame seeds
- 1 medium size Onion
- 3-4 flakes Garlic
- 5-6 nos Green Chilli , can +/- based on your preferance
- 1 medium size Tomato
- Goosberry size Tamarind
- Salt to taste
Tempering
- 2-4 tsp Oil / Ghee
- 1 tsp Mustard
- few Curry Leaves
- Pinch of Hing
Instructions
