Gobhi Bhurji Recipe with step by step photos / Gobi Kheema is an Indian version of Cauliflower scramble where in grated / minced gobhi are pepped with few basic spices . Gobi Bhurji is Indian version of scrambled Cauliflower . One can make Bhurji with Paneer , Egg , Soya chunks , Tofu , non veg etc and today’s dish is vegetarian version .
Making gobi bhurji doesn’t even take 15 mins to make if we have food processor in hand. Since cauliflower is already minced , the cooking time is also saved .Such quick dishes are super handy for a weekday dinner or for lunch box .
The best part is … you can use this gobhi bhurji as a filling for sandwich , serve with roti or rice or even relish it as a meal with some salad on side . Super versatile isn’t it ??
Gobhi Bhurji Recipe with step by step photos :
- Clean a medium size cauliflower . Immerse the florets in hot salt water for few minutes to remove if any impurities and worms . Drain, pat dry on a cotton cloth. Grate using a grater / food processor. Our minced cauliflower is ready.
- In a kadai / thick pan , heat 2 tbsp oil + 1 tbsp ghee . Add a bay leaf , small piece of cinnamon , few pepper , tsp cumin seeds / jeera and 1/4 tsp Hing. Let they get aromatic.
- Add 1 big onion , tsp Ginger garlic paste and 2-3 chopped chilli . Saute for 2-3 mins on medium flame . Let onion, turn translucent and raw smell from onion garlic go.
- Later add minced cauliflower and handful of frozen / fresh peas. Sauté 2-3 minutes.
- Add 2-3 medium size Tomato puree.
- Add salt to taste , 1/2 tsp haldi , tsp Chilli powder , 2 tsp Dhania / coriander powder . Combine everything and saute 1-2 mins.
- Add a cup of water , cover and cook for 6-7 minutes on medium flame.
- When gobi is cooked , add tsp aam choor powder ( dry mango ) , tsp kasoori methi , tsp Garam Masala Powder , 1/2 tsp Kitchen King Masala / Chole masala / maggi taste maker and coriander leaves. Mix . Cook for 1-2 mins on high flame. Make sure all the water content from bhurji has evaporated.
- Gobhi Bhurji / Gobhi Kheema … scrambled cauliflower is ready to serve. Enjoy it with roti / naan / bread
Gobhi Bhurji
Ingredients
- 1 medium size Cauliflower / Gobhi
- 1 Big Onion , finely chopped
- 2-3 nos Tomato
- handful frozen / fresh peas
- tsp Ginger Garlic paste
- 2-3 nos Green Chilli, chopped
- 1/2 tsp Turmeric / Haldi
- 1 tsp Red Chilli powder
- 2 tsp Dhania / coriander powder
- 1 tsp aam choor powder / dry mango
- 1 tsp Kasoori methi
- 1 tsp Garam Masala Powder
- 1/2 tsp Kitchen King Masala / Chole masala / maggi taste maker
- few Coriander leaves, chopped
- salt to taste
To Temper
- 2 tbsp Oil
- 1 tbsp Ghee
- 1 no Bay leaf / Tej Patta
- small piece Cinnamon / Dalchini
- few Pepper
- tsp Cumin seeds / jeera
- 1/4 tsp Hing / Asafoetida
