Health benefits of Chickpeas

Green Chutney: The Magic Potion 

Made using coriander and mint, this green dip is also known as Green Chutney. This is a famous side condiment for Indian snacks and sandwiches. Adding this tangy flavor comes with a bag full of benefits.

Mint leaves are known for promoting digestion, getting rid of inflammation, and relieving the stomach. It is a great appetite enhancer and cures nausea. These leaves soothe the digestive tract and aid in cooling.

Coriander leaves are a powerhouse of vitamins, minerals, and antioxidants. Providing many health benefits, these leaves are loaded with vitamin K which aids in digestion. They are full of antioxidants and help in fighting free radicals in your body.

This chutney adds a lot of flavor to anything you eat; be it khichdi, pakoras, parathas, chilla, and papad. You can preserve this chutney in the refrigerator for 3-4 days.

How to Make Masala Chickpea Sandwich

Firstly, we need to prepare the pickled onion and green chutney, they will taste this sandwich to the next level. Let’s prepare pickled onions as they would need marination. Also, thinly slice one cucumber and tomato to place inside the sandwich.

Instant Pickled Onions –

Thinly slice one onion, and put it in a bowl with ½ tsp sugar, a pinch of salt, and the juice of half a lemon. Break up the onion slices using your fingers or fork for 30 seconds, and mix everything well. Cover them till we prepare other things.

Green Chutney –

Ingredients:

Half a bunch of fresh Coriander or Cilantro and Mint Leaves (don’t use dried mint powder), 1 green chili, 2 tsp freshly chopped ginger and garlic, 1 tsp roasted cumin seeds, lime Juice (or dry mango powder), and Ice Cubes (to give vibrant green color to the chutney).

How to Make Green Chutney Recipe

Put fresh and washed coriander and mint leaves in a blender jar. Add green chilies, chopped or grated ginger and garlic, roasted cumin (or jeera powder), lime juice, black salt, and ice cubes. Blend them all into a thick paste and transfer to a bowl.

Spicy Chickpea Filling

Soak ½ bowl of chickpeas in 3 bowls of water overnight. Boil them with salt and keep them aside.

In a skillet, heat one tbsp oil and add 1 tsp cumin seeds. Once they sizzle, add one finely chopped onion with a pinch of salt. Cook these until the onion turns brown. Now add finely chopped green chili, ginger and garlic paste, and saute for 2 to 3 minutes.

Once they are cooked, add usual Indian spices such as dhania powder, haldi powder, jeera powder, and mirchi powder, and finally add coarse tomato paste (1 small tomato is fine) and cook these for 6-7 minutes.

Add boiled chana or chickpeas to the vessel, and mix them well with the spices. Smash chickpeas and cook them for 5 minutes. After they’re properly cooked, put them off the flame and add lemon juice.

Allow this chickpea or chana masala to cool. Put it in a bowl, add 1 tbsp yogurt and 1 tbsp mayo, and toss them well. Taste the mixture and adjust the salt as per your liking.

Take 2 slices of sourdough bread, spread green chutney on one side, put baby spinach, add chana filling, and pickled onion, and add thinly sliced cucumbers and tomatoes. Put another slice on top and slather butter, toast the sandwich, and serve hot with ketchup!
