About Spinach Khichdi :
Khichdi is no doubt a comfort food to any Indian.. any time . It’s one pot , simple , tasty and a full filling meal is ready in no time .
There are few variations of the simple basic khichdi and this palak khichdi is one such . A puree made of palak , spices , chilli is made and boiled with a mixture of cooked rice and dal . Lastly an extra tempering of garlic elevates the dish to a complete new level , making it so flavorful .
Loaded with the goodness of Spinach ,this dish is not just healthy but tasty and perfect for any quick day lunch / dinner . Serve hot with ghee drizzled on top and some roasted papad n side … trust me , tastes so good.
Palak Khichdi Recipe with step by step photos :
- Wash and drain rice and moong dal
- Transfer the washed rice and moong dal to a pressure cooker / electric cooker / instant pot .
- Add haldi, tsp salt and 4 cup of water ie 1: 4 proportion . Mix well .
- Bring to boil and pressure cook for 3 whistles or if using electric cooker ,cook 15 mins .
- Check if rice and dal is cooked well. It should be cooked soft , mash gently using a ladle when hot
- To make spinach puree , to a mixer blender add spinach , coriander leaves ,ginger garlic , green chilli and water .
- Blend to make a puree . Keep the spinach puree aside to use later . keep the lid open , else it may oxidize and change color
- In a kadai heat oil + Ghee . When it’s hot add whole spices and bay leaf . Fry for few seconds . Add chopped onion , Saute 1-2 mins .
- Add tomato and continue sautéing . Let tomatoes get soft .
- Later add Palak Puree , jeera powder , dhania powder and garam masala. Combine . Saute a min
- Add mashed rice and dal mix. Combine well .Add salt to taste .
- Adjust consistency by adding water. Simmer and boil well
- lastly for extra flavor , prepare one more tempering . In a small kadai , heat ghee , Splutter jeera . Add finely chopped garlic and saute golden . Add Hing and red chilli . Saute few seconds .
- Pour the tempering over Palak Khichdi
- Enjoy Palak khichdi hot with some ghee drizzled on top
Palak Khichdi
Ingredients
- 1 Cup Rice
- 1/2 cup Moong Dal
- 1/2 tsp Haldi / Turmeric
- tsp Salt to taste
Palak Puree
- bunch of Palak / Spinach
- few sprigs Coriander leaves
- 3-4 flakes Garlic
- 1 inch Ginger
- 3-4 nos Green Chilli
To temper
- 2-3 tbsp Oil
- 1-2 tbsp Ghee
- whole spices , small piece Cinnamon , 2-3 Cloves ,3-4 Cardamom
- 1 Bay leaf , tej patta
- 1/2 tsp Dhania Powder/ Coriander powder
- 1/2 tsp Cumin Powder / jeera powder
- tsp Garam masala powder
- Salt to taste
Extra Tempering
- 1-2 tbsp Ghee
- tsp Cumin seeds / jeera
- 3-4 flakes Garlic, finely chopped
- pinch of Hing / Asafoetida
- 1-2 Red Chilli , broken
