There are many ways one can make sweet potato fry .. today i am showing one of the simplest yet delicious version. My kids lovvvveeee it as they are mildly sweet , spicy and full of flavors .
We all know Sweet Potatoes also are packed with lots of nutritional benefits. So we should use both of them regularly in our diet
My Grandmother used to roast this Sweet Potato on coal inside wood fire and just the simple charred sweet potatoes would be our evening snack and trust me we litrally used to fight for that last piece. It used to be that tasty .
We can make many dishes out of this sweet potato like raita , chutney , cutlet , curry , paratha , halwa etc
Today’s stir fry or palya as is called in kannada is a very basic one and there are little chances to err and the end result most of the time is finger-licking. Yes friends its such a super easy roast recipe that can be prepared within 15 minutes using basic ingredients from the pantry. Do try
Sweet Potato Stir fry recipe with step by step photos
- Peel the sweet potatoes .
- Slice them into thin slices as shown in pic .
- Immediately, drop the sweet potato slices into a bowl of water . This step helps in preventing discoloration .
- To make sweet potato stir fry, first take a kadai . Heat oil . Add a tsp of mustard . Once they splutter , add few curry leaves and a pinch of hing .
- Drain off water completely from the sweet potatoes and add to the pan . Fry for a minute . Cover and cook for 3-5 mins on low medium flame . Note that , sweet potatoes gets cooked soon . We don’t want them , to get over cooked and turn mushy .
- The sweet potatoes should be form to look at and when pressed soft and well cooked. This is the indication that sweet potatoes are perfectly cooked .
- Sprinkle a tsp of red chilli powder , 1/2 tsp Dhania powder , 1/2 tsp Haldi and salt to taste .
- Combine everything nicely such that masala is well coated on potatoes
- Fry the sweet potatoes nicely on a low flame for 5-6 minutes such that potatoes get nicely roasted and gets golden brownish spots here and there. Sprinkle few coriander leaves if you want .
- Sweet potato fry is now ready to be served .
- Enjoy with Dal Rice / Rasam Rice / Curd Rice / Roti / as a side too .
Points to note while making Sweet Potato Stir Fry
- Slice sweet potatoes uniformly to promote uniform cooking.
- Placing sweet potatoes in water is very important else the slices will discolor.
- This sweet potato fry is made without water. For best roasted effect we would be sauteing in oil and cooking in steam.
- If you are in a hurry , you can partially steam cook sweet potatoes , peel and dice them . And finally toss them in tadka till crisp .
- For additional flavor , if you want you want can add onion / rasam powder / ginger garlic paste .

- 1/2 kg Sweet Potato / Genasu
- 1-1.5 tsp Red Chilli
- 1/2 tsp Dhania powder /coriander powder
- 1/2 tsp Haldi / Turmeric
- Salt to taste
- few Coriander leaves

- 2-3 tbsp Oil
- 1 tsp Mustard
