Veg fried Rice .. one of the most popular dishes across any Indochinese restaurant . Making it at home is super easy . Firmly cooked cold rice is tossed with lots of veggies ,few simple sauces and mild seasoning on a very high heat.
If you have some pre cooked rice and chopped veggies ready .. trust me making this fried rice doesn’t take more than 10 mins !! Yes .. it’s that super quick !! And end result .. no less than any restaurant without using any MSG or ajinomoto !! You can sneak as much veggies you want .
This is one of the best dishes to clear leftover rice .
My recipe does not use lots of sauces or any rare ingredient that we may not have in the pantry. It’s ery basic , simple and healthy .. something you will keep wanting to eat more . Do try .. and i am sure you will love it .
Few points to note while making Veg fried rice Recipe
- As we are cooking everything in super high heat for a quick time, it is very essential to keep everything to prep initially and keep all your ingredients ready ,before starting the actual cooking.
- Cook rice little firm and cool well . This is the key for a well made fried rice .. mushy cooked rice is a completely let down.
- You can use any variety of rice actually. Long grain rice, short grain rice, basmati rice, jasmine rice, white rice, brown rice , millets , quinoa anything is fine. The only key for perfect fried rice is the cooked rice should be cold, non sticky and grains separate.
- Cook veggies on high ,toss just a few mins , maintain crunchiness. Stir frying the ingredients at high heat in a good wok or cast iron skillet is what makes fried rice special
- You can use of choice of mixed veggies like beans , carrot , peas , cabbage , capsicum , brocolli , corn , baby corn . mushroom etc . Use whichever you have handy .. but do not skip cabbage and capsicum . They enhance the taste .
- Adding little sugar to veggies while tossing , helps in retaining color of the veggies
- Adding sauces to rice also helps in retaining veggies color & looks attractive
- Sesame oil enhances taste . If possible use it only . Sesame oil lends a deep flavor and taste that is so authentic.
- If you like white color fried rice use white pepper powder and light soya sauce .
- You can use green chilli sauce too and reduce pepper pwd
- I do not add ajinomoto or MSG in any of my recipes. If you are ok can add a pinch or two .
Veg Fried Rice with step by step photos
- Cook and Cool the rice completely before using in vegetable fried rice. Take care to cook rice such that the grains are little firm and separate . Keep the rice spread on a wide plate till ready to use .
- Keep the chop veggies ready . Chop all the veggies fine and thin / shred the into juliennes . I typically use beans , carrot , peas / corn , Cabbage and capsicum . Choice of veggies and quantity you want to add is purely your choice . You can refer notes section for the other veggie option that you could possibly add . But in any case keep the quantity of cabbage and capsicum more than other veggies .
- In a wok / kadai heat 2-3 tbsp oil on medium heat. When oil is hot ,add tsp of finely chopped garlic. Sauté garlic till slight crisp. Add 1 big sliced onion, 2-3 finely chopped green chilli and tsp finely chopped /grated ginger. Sauté for 1-2 minutes.
- Add beans, carrots, peas or veggies of your choice . Add a tsp of salt and tsp of sugar . Addition of tsp of sugar helps in retaining color . Cook for 1-2 minutes on high heat. The veggies should remain crunchy.
- Add chopped cabbage and capsicum. Saute a min . Sauté all the veggies on high flame.
- Maintain crunchiness of veggies.
- Add precooked cooled rice .
- Add pepper powder, soya sauce, chilli sauce and vinegar … Combine everything. Toss everything on high flame. Quantity of sauce and pepper powder is actually your choice , you can +/- based on how you like .
- Lastly garnish with chopped spring onions.
- Enjoy Veg fried rice hot 😋 as such or with some asian veg stir fry , chilli paneer , gobhi manchurian , veg manchurian etc on side .
VEG FRIED RICE
Ingredients
- 3 Cup Cooked Rice
- 2-4 tbsp Sesame Oil / vegetable oil
- 1 tsp Garlic, finely chopped
- 1 big Onion , sliced
- 1 tsp Ginger, grated / chopped
- 2-4 nos Green Chilli, chopped
- 2 cup Mixed veggies like beans , carrot , peas etc , chopped
- 1 no Capsicum / bell pepper, sliced
- 1/2 cup Cabbage, shredded
- 1 tsp Sugar
- 1 tsp Pepper powder, , can +/- based on your preference
- 2 tsp Soya sauce
- 1 tsp Vinegar
- 1 tsp Green Chilli sauce
- Salt to taste
- Spring onion , to garnish
Instructions
