Take firm Tofu . Grate / crumble tofu . I usually grate them using a grater .
To a pan / kadai add oil . Once oil is hot , add Jeera . Let it splutter , add hing. Add onion , green chilli , ginger garlic paste and sauté for 2-3 mins. Let onions turn pink.
Add tomatoes and tsp salt . Cook till tomatoes are mushy .When the tomatoes are mushy , add chopped Capsicum , Haldi , Red Chilli powder , Dhania powder , Garam Masala and little Kasoori Methi . Combine everything . Sauté for a minute .
Add grated Tofu . Mix . Cover & Cook for 2-3 minutes . Let the tofu crumbles take in flavor .
Lastly add coriander leaves and give a mix .
Serve hot tofu Bhurji with Roti , stuff it to make paratha / roll / sandwich etc . Versatile and tastes so good .
