To a pan ,add oil . Once oil is hot , add finely chopped Garlic . Saute for a minute.
Once garlic is slightly roasted , add finely chopped Onion , finely chopped Ginger and finely chopped Green Chilli . Fry for a min . Let onions turn soft .
Later add mixed veggies like beans , carrot , cabbage , capsicum , mushroom etc . Add salt to taste , Sugar and Pepper Powder .
Stir fry for 2-3 minutes , let the veggies get half cooked .. but maintain the crunchyness .
add 4 cup water and cover and cook for 1-2 minutes .
Next add all the sauces 1-1 ie Soya Sauce , Red chilli sauce , vinegar . Boil for 2-3 minutes , let the flavors get absorbed well.
Now prepare cornflour slurry by mixing cornflour in water. Pour the slurry into the soup and mix well.
Continue to boil for 2 more minutes or until soup thickens slightly.
Lastly, add finely chopped spring onion and enjoy hot and sour soup.
