Wash, wipe the okra properly using dry kitchen cloth. Cut the head of Bhindi, and then chop into medium size pieces
In a kadai heat oil. Add the chopped bhindi. Saute for 5-6 mins stirring or tossing occasionally .The slime nature will go off.
Next add Onion florets .Fry for 1-2 mins. Let onion just turn translucent, retain the crunchiness of Onion . Keep sauted Bhindi and onion aside
To a small blender add 1 Big Onion , garlic flakes , ginger , green chillies . Coarse grind. Keep Onion Ginger Garlic paste aside .
To the same Kadai , add oil . Add Jeera , ajwain seeds and a pinch of Hing . Let they splutter . Add Onion ginger garlic paste . Saute for 2-3 mins . Let the raw smell go .
Puree tomato . Add to the kadai . Add salt and saute for 2-3 mins. Cover and cook , stir in between .After 2-3 mins , observe the change in color , tomatoes would have cooked and raw smell would have gone.
Add all dry spices 1-1 ie Haldi , Chilli Powder , Dhania powder ,Amchoor powder , Kasoori methi and combine well. Cover and cook for 1-2 mins .Base masala for bhindi do pyaza is ready .
Add tossed bhindi , onion and diced de seeded tomatoes. Add salt to taste and Garam masala powder .
Combine everything well . Cook for 2-3 mins . Let the veggies take in flavor . Lastly add chopped coriander leaves .That’s it delicious Bhindi Do pyaza is ready to relish .
