In a large pan take 4 cups of water . Add little salt and a tsp of oil . Allow water to boil . When it boils add 1 cup pasta into the boiling water.
After 6-7 mins .. pasta would have cooked . Check , take care not to over cook . It should be al dente ( Cooked just enough to retain the shape ) . Drain and retain the stock water . Refresh the cooked pasta with running water . This avoids over cooking of pasta due to the heat .
Cooked drained pasta is ready . Keep aside pasta
To Make Carrot Sauce
To a thick kadai / pan , add tsp of Butter or olive oil . Once hot add 4-5 flakes of Garlic . Toss a minute .
Later add 1/2 diced Onion and 1/2 tsp Pepper .
Saute until they turn translucent . Let the raw smell from garlic go .
Meanwhile , wash , peel and dice 2-3 carrots . Add into the pan . Add 5-6 Almonds , 3-4 Walnuts , salt . Saute 2-3 mins . Let the carrot shrink a bit and loose its raw smell .
Add a cup of water . Cover and cook till carrots are soft.Once carrots are soft , allow the mixture to cool a bit .
Transfer into a blender and grind into a very smooth puree .Transfer the carrot puree into the pan . Add pasta water and adjust consistency . Mix
Add tbsp of Pasta sauce ( optional ) , tsp Chilli flakes and tsp herbs . Combine . Simmer & bring the sauce to boil . Creamy carrot sauce is ready
To the carrot sauce add cooked Pasta . Mix . Simmer and cook for 2-3 mins . Let pasta take in all flavors .
Serve Carrot sauce pasta hot .Creamy and so delicious indeed .
