2tsp Red Chilli powder
Salt to taste
To temper :
2 - 4tbspGingely / Groundnut oil
1tspMustard
A big generous pinchAsafoetida/ hing
few Curry Leaves, ( Optional )
Masala / Spice Powder
10 - 15nosRed Chilli, ( based on your spice level )

1.5 - 3tbspRed chilli powder
1.5tspFenugreek seeds methi
1/2tspMustard seeds
Masala / Spice Powder
1/2tspMustard
1/4tspMethi seeds
Instructions
Wash a medium sized raw mango. You can use Tothapuri mango or the regular variety pickle raw mango for this.Chop into small bite sized small pieces as shown below.
Prepare masala for the pickle, in a kadai / pan dry roast Mustard seeds and fenugreek seeds till crisp and aromatic. Keep aside, let it cool .Once masala is cool , make a powder using mortar pestle or mixer .
In a kadai / thick pan , heat sesame oil or groundnut oil . Once hot add mustard seeds . Splutter . Add curry leaves and big pinch of hing .
Add Haldi , powdered masala, salt and red chilli powder . Give a quick mix , make sure chilli powder doesnt get burnt .
Add chopped mangoes.Let raw mango pieces get well coated with all spices nicely. Saute for 1-2 mins. By this time mango pieces would have turned little tender .Switch off
That’s it our spicy Instant Mango pickle is ready to enjoy.Store in air tight jar once its cooled to room temperature .
