Transfer the chopped veggies to a pressure cooker . Add in tsp salt , haldi and water . Pressure Cook the veggies for 2 whistles . Ensure that they are cooked just right – neither crunchy nor too mushy. Alternatively , you can steam cook the veggies or microwave .
Meanwhile , prepare masala . For the masala, to a mixer add all the ingredients mentioned under “To Grind “ . Add little water and grind to a smooth paste . Keep aside
Next , Heat oil in a kadai or pan. Temper with mustard seeds and urad dal .When they splutter add broken red chillies, curry leaves . Add finely chopped onion .Fry till translucent.
Add chopped tomatoes. Fry till mushy.
Next add in the masala paste and cooked veggies Add salt and water. Mix well . Simmer and allow it to boil well . The sagu should be having thick gravy consistency
When it boils,it thickens a bit. If requied add some more water to get the desired consistency. Switch off. Lastly ,add chopped coriander leaves and squeeze lemon juice.
Serve hot hot saagu with poori, chapathi, dosa, rava idly or even rice.
