Add Hot water. Combine everything well .Bring to boil.
Pressure cook in medium flame for 3-4 whistles. Switch off the flame and allow the pressure to cool naturally.
Once the pressure has released , Open the cooker and when the rasam rice is still hot mash gently . Mashing the rasam rice when its still hot gives a nice creamy mushy texture .
Next to the mushy rasam rice , add Tamarind pulp , Jaggery and water as required to adjust consistency . Combine everything well . Rasam rice tastes best gooey mushy and little watery .
Prepare a tempering . Heat ghee . Add mustard Once it splutters add jeera and hing. Lastly add few curry leaves .
Pour the tempering over the Rasam Rice . Add chopped Coriander leaves . Combine everything .
Our One Pot Rasam Rice is ready to serve . Enjoy it hot with some ghee on top , papad on side and some potato fry . A meal can’t get better and tasty than this .. yumm .
