Palak Corn Pulao / Spinach Corn Rice is a Super Easy, Lunchbox Friendly, Bachelor Friendly variety rice made with super healthy spinach , corn , rice and flavored with Indian spices .
Wash and soak basmati rice or any rice in water for 15-20 mins. Drain water completely.
Clean , wash and chop 1 Spinach.
To a cooker add Oil . Once hot add a bay leaf , few whole spices like cardamom , cloves , cinnamon , star anise , jeera . Saute for few seconds .
Add sliced Onion , tsp Ginger garlic paste ,3-5 green chillies .Saute for 2-3 mins . Let onion turn translucent and raw smell go .
Add a diced tomato , tsp Salt and saute for a minute. Let tomatoes turn little soft .
Later add chopped spinach , chopped coriander and mint leaves , sweet corn , Dhania powder ,Biryani / Garam masala powder . Saute for 2-3 mins .Let the palak leaves wilt .
Add 2 cup hot water ie 1 cup rice , 2 cup water .
Add soaked drained basmati rice , salt to taste and combine everything well . add a tsp of ghee .
Pressure cook pulao for 2 whistles on medium high flame . Allow the cooker to cool completely and pressure to release .Palak corn pulao would have perfectly cooked . Gently fluff
Palak corn pulao is ready . Enjoy hot or carry in lunchbox. Enjoy as such or pair with raita .
