In a large bowl , wash and soak 1 cup peanuts for about 2-3 hours. If you are using fresh peanuts , skip soaking part.
drain off the water and transfer to the pressure cooker. Add a cup of water and a tsp of salt . Pressure cook for 3 whistles on medium flame . Once the pressure releases , check , peanuts. It should have cooked soft , yet firm. drain off the water and keep aside.
In a pan / kadai prepare a tempering .Heat 2-3 tsp oil and splutter 1 tsp mustard, 1 tsp urad dal. Once they splutter add a pinch of hing, 1 dried red chilli broken and few curry leaves. saute for a minute . add green chilli too. if you want can add onion , but if doing for festival skip .
Next , add in boiled peanuts and ΒΌ tsp salt. saute for 1-2 minute. let peanuts take in flavors
Lastly add add 2-3 tbsp fresh grated coconut , few coriander leaves chopped and mix well .Check if peanuts have absorbed well .
That's it .. peanut sundal is ready to serve !
