Wash rice and cook it in the proportion 1: 2.5 ie 1 glass rice 2.5 glass water. The cooked rice grains should be separate, not mushy. Once cooked, spread the cooked rice on a wide plate. This will make the grains separate further & also helps to cool quickly. Allow the rice to cool completely.
To a pan add Urad dal ,Black pepper , red chilli , jeera and curry leaves . Dry roast till they are crisp and changes color. You can feel the aroma of the freshly roasted masala .
Allow the roasted spices to cool a bit and powder .
To the same pan , add heat Oil + Ghee . Once its hot , add mustard and urad dal . Let it splutter .
Later add few cashew pieces , fry till golden . Next add Curry leaves and hing . Saute few seconds .
To the tempering , add the freshly ground Masala powder , grated kopra and salt . Fry for 1-2 mins.
Add Cooked cooled rice to it . Squeeze lime . Mix well
Allow the ulundogare to sit for some time . Let the flavors blend well .
Just before serving , you can crush few urad papad to the rice ,give a quick mix and serve immediately .
Tasty & Easy Ulundogare is ready to serve. Serve at room temperature as such or chutney / curd .!!
