Masala Khichdi or Vegetable Khichdi is a one-pot comforting dish made with lentils, rice, spices, and vegetables. It's nutritious, filling ,wholesome and tasty ! Enjoy it hot with ghee drizzled on top ..tastes so so good
Next add chopped Onion ,Ginger Garlic Paste and slit Green Chilli. Saute 1-2 mins till onions are translucent .Add chopped Tomato, fry till tomatoes are soft and mushy.
Next Add Chopped Mixed Veggies, tsp salt, Haldi, Red Chilli powder. Fry for 1 min
Add drained Rice and Moong mix. Fry for 1-2 mins. Add 5-6 cup water ( 1:4 proportion) Salt, Garam masala powder and tsp ghee. Mix.
Pressure cook for 2-3 whistle on medium heat. Allow the pressure to release. Khichdi should be cooked soft and mushy . Stir well , If khichdi is little thick, add little hot water and mix. The consistency of khichdi is best when its like that of a porridge . So accordingly adjust water quantity.
Enjoy hot Masala Khichdi with a drizzle of ghee, papad and pickle on side
