About Chow chow stir fry:

Chayote Squash or chow chow is known as Seeme Badanekayi in kannada. It generally tastes bland but gets blended well with other flavors and taste very delicious . One can make various dishes with it like raita , kootu , sambar, chutney etc.

Today let’s see how to make a simple Karnataka style Chow Chow – Seemebadanekayi Palya .. a very simple yet very delicious side dish that tastes great with rice / chapathi . There are various ways in which one can make this dish ..& this is how I usually make . Since the veggie is bland in taste , adding a tsp of rasam powder enhances the flavor and makes the stir fry so good.

Coconut oil, Udupi style rasam powder and hing …makes this bland veggie so flavorful . A tsp of jaggery and coconut adds a tinge of sweetness making the dish more tasty. Even if you don’t like chow chow ..trust me you wil like this simple palya ..do give a try .

Seemebadanekayi palya with step by step photos :

  • Wash and Peel off the chayote squash , cut into half vertically , de seed . Pick fresh tender chow chow for best taste .
  • Chop into small pieces
  • Take a pan and heat oil . Add mustard seeds , urad dal , channa dal . Let it splutter.
  • Later add jeera , hing ,red chilli , curry leaves and green Chilli . Saute for few seconds . Let they get crisp .
  • Add chopped chayote squash , haldi and salt to taste .
  • Combine .
  • Add 1/2 cup water , cover and cook for 4-5mins.
  • When veggies are cooked 75 % , add rasam powder and jaggery .
  • Combine . Cover and cook for 2-3 mins more . Let the veggies take in flavor .
  • Lastly add grated coconut and chopped coriander leaves . Toss it un covered for few more minutes till the extra water if any gets evaporated .
  • Seemebadanekayi palya or chow chow stir fry is ready to serve . Enjoy with rice or chapathi
  • Tastes great as a side dish

Ingredients
 

  • 1/2 kg Seeme Badanekayi / Chow Chow / Chayote Squash
  • 2-3 nos Green Chilli
  • tsp Turmeric / Haldi
  • 1-1.5 tsp Rasam Powder
  • 1 tsp Jaggery
  • 3-4 tbsp Coconut, grated
  • few sprigs Coriander Leaves, chopped
  • Salt to Taste

To Temper

  • 2-3 tsp Coconut Oil / Any Oil
  • 1 tsp Mustard
  • 1 tsp Urad Dal
  • 1 tsp Channa Dal
  • 1/2 tsp Jeera / Cumin seeds
  • pinch of Hing / Asafoetida
  • 1 no Red Chilli
  • Few Curry Leaves

    Just love ur recipes…and also the way how u use Karnataka style to uplift our recipe which is often generalised with Tamil or other South Indian recipes…Karnataka has a distinct recipe,different spice blend and great variation even within state…expecting more Karnataka style dishes from u covering all districts
