Khichdi is a staple food and is very common in every household. People make Khichdi in their own different ways. But the end result is always healthy and delicious . One can make it with vegetables , without vegetables or just use choice of veggies. If making for babies and patients , one can keep it very mild with no masala . It’s mushy ,soft and easy to digest.
Let’s see today how to make spicy moong dal khichdi loaded with veggies, which is easy as well as delicious. Here you go ..
Vegetable Khichdi Recipe with Step by step photos :
- Wash well 1 cup small grain Rice and 1/2 cup Moong Dal . Drain them .
- Wash and chop vegetables of your choice like Beans, Carrot, Peas , Gobhi, Knol Khol , Potatoes etc .
- Now after this, heat 3-4 tsp Oil and 1 tsp ghee in a pressure cooker. When the ghee is hot, add 1 bay leaf , 1 small piece Cinnamon , 3-4 Cloves , 1-2 Elaichi ,1 tsp Jeera and pinch of Hing. Sauté few seconds .
- Next add 1 chopped Onion ,tsp Ginger Garlic Paste and 3-4 slit Green Chilli. Saute 1-2 mins till onions are translucent .
- Add 1-2 chopped Tomato, fry till tomatoes are soft and mushy.
- Next Add Chopped Mixed Veggies, tsp salt, 1/2 tsp Haldi, 1/2 tsp Red Chilli powder. Fry for 1 min
- Add drained Rice and Moong mix. Fry for 1-2 mins.
- Add 5-6 cup water ( 1:4 proportion) Salt, 1/2 tsp Garam masala powder and tsp ghee. Mix.
- Pressure cook for 2-3 whistle on medium heat. Allow the pressure to release. Khichdi should be cooked soft and mushy . Stir well , If khichdi is little thick, add little hot water and mix. The consistency of khichdi is best when its like that of a porridge . So accordingly adjust water quantity.
- Enjoy hot Masala Khichdi with a drizzle of ghee, papad and pickle on side
Points to Note :
- You can make Khichdi from any rice variety . I like to use small grain rice like Jeera Rice.
- Instead of Rice as a replacement you can use Broken Wheat ( Daliya ) , Quinoa or Millets.
- It can be made vegan by replacing the ghee with oil.
- Cook Khichdi soft and mushy. The texture should not be like pulao but slight overcooked .
- You can make them in traditional stove-top pressure cooker method or in Instant pot .
Vegetable Khichdi | Masala Khichdi
Ingredients
- 1 cup Sona Masoori Rice or Small grain rice
- 1/2 cup Moong dal
- 1.5-2 cup Mixed Veggies, like beans carrot peas gobhi knol khol etc
- 1 medium size Onion, chopped
- 1-2 medium size Tomato, chopped
- 3-4 nos Green chilli, slit
- 1 tsp Ginger Garlic Paste
- 1/2 tsp Turmeric / Haldi
- 1/2 tsp Red chilli powder
- 1/2 tsp Garam masala powder
- 1 tsp Ghee
- Salt to taste
To Temper
- 3-4 tsp Oil
- 1 tsp Ghee
- 1 Bay leaf / Tejpatta
- 1 piece Cinnamon
- 3-4 nos 3-4 cloves
- 1-2 nos Elaichi
- 1 tsp Cumin seeds /Jeera
- Pinch Hing / Asafoetida
Instructions
- Wash well Rice and Moong Dal . Drain them .
- Wash and chop vegetables of your choice like Beans, Carrot, Peas , Gobhi, Knol Khol , Potatoes etc .
