PEANUT CHUTNEY RECIPE

Many of you had asked to share Andhra style Peanut Chutney recipe since long and here it’s today. Also known as groundnut chutney / Shenga chutney / Kadlekai chutney / palli chutney… it’s quick and a nice change from the regular coconut/tomato chutney,  a must try .. a keeper infact !!! It’ s easy to make and tastes amazingly delicious with dosa, idli, uttapam rice etc.

Chutney is one of the crucial category in Indian cuisine. There are so many types of chutneys one can make. I have already shared quite a few chutney recipes, and today here’s yet another Chutney which most of us will love.

There are many ways and variations one can make peanut chutney  .. like

  • Instead of red chilli, you can use green chilli.
  • For a change in flavour, you can add few mint leaves along with onion garlic and saute to make the chutney tastier. if you want y.ou can skip garlic .
  • you can reduce peanut quantity a bit and while grinding add little fresh coconut.
  • You can add tomato and some coriander leaves this alter the taste.

PEANUT CHUTNEY RECIPE

PEANUT CHUTNEY RECIPE / GROUNDNUT CHUTNEY RECIPE / SHENGA CHUTNEY

Ingredients
 

  • 1 Cup Peanut / Groundnut
  • 1/2 medium size onion
  • 4-5 flakes Garlic
  • 5-6 nos Red Chilli, based on your preference
  • few Curry Leaves
  • small piece Tamarind
  • Salt to taste
  • 1-2 tsp Oil

to temper

  • 1-2 tsp Oil
  • 1 tsp Mustard
  • 1/2 tsp Urad dal
  • few Curry Leaves
  • a pinch of Hing /Asafetida

Instructions
 

  • Dry roast peanuts in a kadai or microwave , till the skin peels off or brown spots appear on them. Keep them aside .
  • Add 1-2 tsp oil into the kadai . Later add onion , garlic , few curry leaves , tamarind and red chilli . Saute till raw smell from Onion and garlic goes .
  • Transfer the sauted ingredients into a plate . Allow them to cool .
  • Add salt and water as required and grind to a chutney consistency .
  • Prepare a tempering . Splutter mustard seeds , urad dal , curry leaves and hing . Pour it over the chutney and its ready to serve .
  • Enjoy tasty peanut chutney with dosa / idli / rice etc
