For bachelors n beginners, this South Indian Style Potato fry recipe is like a blessing. There are little chances to err and the end result most of the time is finger-licking. I know many of us know how to make ” Potato Fry ” .. but for people who are new bees to kitchen … i am sure this step by step explanation would help. There are many ways one can make Aloo fry .. i had shared earlier one method ; and today i am showing another simple yet delicious version. My kids lovvvveeee Aloo fry to the core .. Potato Fry Recipe with step by step photos :
- Wash and Peel off the skin from the potatoes . Slice them into slightly thick slices and dice them into small pieces as shown in the picture .

- Add it to water immediately to avoid browning. Keep it immersed in water until you start cooking .

- When ready to use , discard water , drain potatoes well and use .

- Take a heavy bottom kadai or pan , preferably cast iron . Add 2-3 tbsp Oil . Once hot , add a tsp mustard and let it splutter . Add a pinch of hing and few curry leaves . Let the curry leaves get crisp.

- Add the drained diced potatoes to the pan and saute for 2-3 mins. Add 1/2 tsp haldi , salt and combine .

- Cover and cook for 5-6 mins on medium flame . Stir in between and continue to cook the potatoes covered .

- After 5-6 mins , potatoes would have cooked 75 % . Add 1.5 tsp Dhania powder , 1/2 tsp Jeera powder , 1-2 tsp Chilli powder , combine well. If required drizzle 1-2 tsp Oil .

- Simmer for 4-5 mins , let the potatoes get crisp . Toss in between .

- After few minutes , you will notice that potatoes are well roasted and golden brownish spots starts appearing here & there .

- Aloo fry is ready to enjoy . Serve with Dal rice / rasam rice / curd rice etc .

Points to note while making Aloo Fry :
- Usage of Cast iron kadai or pan gives the best result while making Potato fry .
- Keep the flame on medium initially and low medium
towards the end stirring in between to get a well roasted crispy potato fry . - Peel , cut potatoes into small medium chunks , keep it immersed in water until you start cooking to avoid browning
- Instead of adding dhania powder , jeera powder , chilli powder etc as a variation you can add rasam powder or sambar powder .
- As a variation , if you want you can precook the potatoes partially in cooker , dice and later toss them in spices .
- To make it more crispier , lastly can add a tsp rice flour and toss .

Aloo Fry – Potato Fry – Alu Fry
Ingredients
- 1/2 kg Potato
- 2-3 tbsp Oil
- 1 tsp Mustard
- 1/2 tsp Haldi / Turmeric
- pinch of Hing / Asafoetida
- few Curry leaves
- 1 1/2 tsp Dhania Powder / Coriander Powder
- 1/2 tsp Jeera Powder / Cumin Powder
- 1-2 tsp Chilli Powder
- Salt to taste
Instructions
