Wash bitter gourd and pat dry. Discard ends and cut into thin slices
Remove the seeds and the flesh from the center like below .No need to scrape the spikes that are in the bitter gourd .
Sprinkle a tsp of salt to the slices , mix and rub .Let they sit for 30 mins .
After 30 mins, using your palm, gently squeeze out juice out of it.
Add in turmeric, salt ,red chilli powder, coriander powder ,gram flour , rice flour and oil .Mix everything well.
Sprinkle just a few drops of water , combine everything well. So that all slices are coated well with masala mixture . Don't add more water it will make them soggy
Preheat the air fryer to 356 F/ 180 °C for 5 mins .Arrange the slice in air fryer basket Air Fry at 356°F / 180°C for 15 mins
After 6-7 mins, Open the air fryer, shake the basket once and then continue cooking. You can use a spoon to mix and toss the bitter gourd slices. this helps in frying bitter gourd slices evenly.
Fry the bitter gourd till they are nice and crispy .That's it ,crispy bitter gourd chips are ready to enjoy.
