Rinse and chop the cabbage. Also chop the onion and tomato. keep aside
Heat oil in a frying pan. Add in tsp of urad dal , tsp of channa dal , few red chili (mix of byadgi and guntur chilli ) and hing. Fry them under medium flame.Roast until dal changes color and chillies are crisp .
Next add in 1.5 cup chopped cabbage and 1/2 onion . Add haldi , tsp of salt and fry 1-2 mins till raw smell goes.
Next , add in tomato , tamarind and combine.Cook 3-4 mins .
Lastly add 3-4 tbsp coconut and mix . Addition of coconut is optional . Switch off and allow to cool .
To the mixer add all the roasted cooled masala ingredients . Add salt and little jaggery if you want.Grind coarse , without adding water .
Take care not to make super fine paste. A little bit texture of cabbage is good and makes the chutney more tasty. This is how the chutney will looks once ground.
Lastly prepare a tempering . To a pan add any oil you like . Add mustard and urad dal , splutter . Add few garlic flakes ( optional ) , fry crisp . Later add little hing and curry leaves . Can add a broken red chilli too . Now add grounded chutney to this . Saute 2-3 mins.
Serve Cabbage chutney with hot rice . Drizzle little ghee while mixing. Will enhance the taste.
