Peel the sweet potatoes . Slice them into thin slices as shown in pic .
Immediately, drop the sweet potato slices into a bowl of water . This step helps in preventing discoloration .
To make sweet potato stir fry, first take a kadai . Heat oil . Add a tsp of mustard . Once they splutter , add few curry leaves and a pinch of hing .
Drain off water completely from the sweet potatoes and add to the pan . Fry for a minute . Cover and cook for 3-5 mins on low medium flame . Note that , sweet potatoes gets cooked soon . We don't want them , to get over cooked and turn mushy .
Sprinkle a tsp of red chilli powder , 1/2 tsp Dhania powder , 1/2 tsp Haldi and salt to taste .
Combine everything nicely such that masala is well coated on potatoes
Fry the sweet potatoes nicely on a low flame for 5-6 minutes such that potatoes get nicely roasted and gets golden brownish spots here and there. Sprinkle few coriander leaves if you want .
Sweet potato fry is now ready to be served .Enjoy with Dal Rice / Rasam Rice / Curd Rice / Roti / as a side too .
