1tsp Pepper powder, , can +/- based on your preference

1tsp Vinegar
1tsp Green Chilli sauce

Instructions
Cook and Cool the rice completely before using in vegetable fried rice. Take care to cook rice such that the grains are little firm and separate . Keep the rice spread on a wide plate till ready to use .
Keep the chop veggies ready . Chop all the veggies fine and thin / shred the into juliennes .
In a wok / kadai heat 2-3 tbsp oil on medium heat. When oil is hot ,add chopped garlic. Sauté garlic till slight crisp. Add sliced onion, chopped green chilli and finely chopped /grated ginger. Sauté for 1-2 minutes.
Add beans, carrots, peas or veggies of your choice . Add a tsp of salt and tsp of sugar . Cook for 1-2 minutes on high heat. The veggies should remain crunchy.
Add chopped cabbage and capsicum. Saute a min . Sauté all the veggies on high flame.Maintain crunchiness of veggies.
Add precooked cooled rice .
Add pepper powder, soya sauce, chilli sauce and vinegar … Combine everything. Toss everything on high flame. .
Lastly garnish with chopped spring onions.
Enjoy Veg fried rice hot ???? as such or with some asian veg stir fry , chilli paneer , gobhi manchurian , veg manchurian etc on side .
