Mango Gingger Thokku is a very easy , tasty and spicy dish that hardly takes around 15-20 mins to make . Tastes amazing when mixed with some hot rice or paired with curd rice . Make once and relish it enjoy with hot rice for couple of months . its also a great side dish for dosa , chapthi , upma or poha . Mango Ginger Thokku Recipe With Step By step Photos
- Wash & pat dry 1/4 kg Mango Ginger nicely .
- Grate the mango ginger .You can peel the skin if you want . I didn’t
- In a pan , dry roast Tsp Methi , 1/2 Tsp Mustard
- When they are aromatic , well roasted , changes color …keep aside .Cool and powder . Keep aside the masala powder to be used later .
- To the same pan add 3-4 tbsp Sesame oil / any oil . Once hot add few curry leaves and big pinch of Hing.
- Add grated mango Ginger . Saute for 3-4 mins .Let the moisture of mango ginger dry out and raw smell go .
- Add salt , haldi , red chilli powder , lemon size tamarind soaked in water , pulsed powder . Combine well .if you want you can add a TSP of Jaggery too .
- Fry for 4-5 mins on medium flame. Stir the thokku in between so that it doesn’t get burnt . You can add 1-2 tbp oil if the thokku looks dry . Thokku tastes good & it’s shelf life increases with some extra oil . Taste test. If you need add chilli powder / salt .
- After the moisture content has evaporated , oil starts oozing from the sides , thokku combines together …switch off the stove
- That’s it our spicy Mango Ginger thokku is ready to enjoy. Store in air tight jar once its cooled to room temperature. Stays good for about 15-20 days without fridge and if refrigerated remains good for months .

Ingredients
- 1/4 kg Mango Ginger / Mavu Shunti
- 1 tsp Methi
- 1/2 tsp Mustard
- 3-4 tbsp Sesame oil / any oil
- 2-4 tsp Red chilli powder
- lemon size Tamarind
- 1/2 tsp haldi
- few Curry leaves
- big pinch Hing
- 1 tsp Jaggery, optional
- salt to taste
