Palak Corn Pulao Recipe with step by step photos :
- Wash and soak 1 cup basmati rice or any rice in water for 15-20 mins. Drain water completely.
- Clean , wash and chop 1 big cup Spinach.
- To a cooker add 2-3 tbsp Oil . Once hot add a bay leaf , few whole spices like cardamom , cloves , cinnamon , star anise , tsp jeera . Saute for few seconds .
- Add sliced Onion , tsp Ginger garlic paste ,3-5 green chillies .
- Saute for 2-3 mins . Let onion turn translucent and raw smell go .
- Add a diced tomato , tsp Salt and saute for a minute. Let tomatoes turn little soft .
- Later add chopped spinach , chopped coriander and mint leaves , 1 cup sweet corn , tsp Dhania powder ,tsp Biryani / Garam masala powder . Saute for 2-3 mins .
- Let the palak leaves wilt .
- Add 2 cup hot water ie 1 cup rice , 2 cup water .
- Add soaked drained basmati rice , salt to taste and combine everything well . add a tsp of ghee .
- Pressure cook pulao for 2 whistles on medium high flame . Allow the cooker to cool completely and pressure to release .
- Palak corn pulao would have perfectly cooked . Gently fluff
- Palak corn pulao is ready . Enjoy hot or carry in lunchbox. Enjoy as such or pair with raita .
Points to note
- Basmati Rice to water ratio i follow is 1: 1.5 /2 ie for 1 cup rice use 1.5 to 2 cup water . If using normal rice you can maintain 1 : 2 1/2 ratio. This ratio slightly varies with quality of rice .
- If you are using basmati rice ,cook for 2 whistle ,on high flame. Switch off. Basmati rice will cook quickly. For normal rice , cook for 2 whistles on medium flame.
- You can add chopped spinach or pureed spinach .
- Can use fresh corn or frozen corn . You can add few other veggies too / add soya chunks / paneer too .

Ingredients
- 1 cup Basmati Rice / Any Rice
- 1 big cup Palak / Spinach
- 1 cup Sweet Corn
- 2 medium size Onion, sliced
- 1 medium size Tomato, diced
- 1 tsp Ginger Garlic Paste
- 3-5 nos Green Chilli, slit
- 1 tsp Dhania powder / Coriander Powder
- 1 tsp Biryani Masala Powder / Garam Masala Powder
- few sprigs Coriander leaves
- few sprigs Pudina / Mint leaves
- 1 tsp Ghee
- Salt to taste
To Temper
- 2-3 tbsp Oil
- 1 no Bay leaf / Tej Patta
- 3-4 no Cardamom
- 4-5 no Cloves
- 1 piece Cinnamon
- 1 no Star Anise
- 1 tsp Jeera / Cumin seeds
