What can I say about today’s classic dish? Rice Bath actually needs no intro to any Kannadiga. In Karnataka, the Vegetable Pulao popularly known as rice bath and is one of the most popular dishes be it restaurants or home. Still, no one gets bored of this ” palav ” …that’s how flavorful, tasty and crowd-pleaser it is.Its apt for quick meal / party / lunch box / any occasion . Pair it up with some raita .. a bowl of hot flavorful pulao is all gone ….
Karnataka style veg pulao is actually very different from the regular pulav. In this, a green masala paste made with herbs and spices is ground and sauteed along with rice and veggies. This base masala is little similar to veg Saagu masala which I have shared earlier. When you see the recipe, at first, you might get afraid seeing the long list of ingredients to be ground ..but fear not .. just take out your masala box and start adding one after the other. It’s actually that easy.
Also, This pulav is made using sona masoori rice and not with basmati rice, unlike the usual pulao. Here rice is not cooked too grainy fluffy like biryani at the same time it’s not mushy either.
Few simple points to note while this Karnataka Style Pualo are as follows :
- Soak rice for about 20-30 mins. This helps in using less water while making pulao and the end result will be nice and fluffy.
- Rice to water ratio i follow is 1: 2 / 1: 2.5. this includes even the water quantity used for grinding masala.
- The usual veggies that i use are beans, carrot, peas and a small potato. If I have knol khol, add that too. Usually, hotels and marriage functions cooks, add knol khol. Whatever is handy, you can use.
- One an add few soaked soya chunks along with veggies for extra taste.
- One can even add ghee roasted bread chunks to the pulao before serving. Just fry a couple of pieces of chopped bread in ghee and mix it before serving the palav. This is my favourite.
- The pulao may look slightly mushy when hot. But it becomes fluffy and separate as it cools down.
- For the authentic taste, try to add all the garam masala ingredients mentioned under masala. In case you don’t have, manage with cinnamon, cloves and elaichi. Later add some garam masala powder.

RICE BATH RECIPE / KARNATAKA STYLE VEG PULAO RECIPE
Ingredients
- 1 big cup Any Rice / Sona masuri rice
- 1 no Bay leaf / Tej pata
- 1 tsp Cumin Seeds / Jeera
- 1/2 tsp Saunf / fennel
- 1 big onion, sliced
- 1 medium size tomato, chopped
- 1/2 -3/4 cup Mixed veggies (Beans,Carrot,Peas,Potato,knol khol etc ), chopped
- 1/2 Lemon
- 2-3 tbsp Oil
- Salt to taste
Ingredients for grinding
- 5-6 cloves Garlic
- 2 pc 1 inch Ginger
- 5-6 nos green chili, Based on how spicy you want
- 1/4 no Big Onion, diced
- 3-4 tbsp coconut
- 1 inch Cinnamon/ dalchini
- 3-4 nos Cloves / lavang
- 2 no cardamom/ elaichi
- 1-2 no Kapok buds / maratha mogggu, optional
- 1 no Star anise /Chakri phool /ananas hoovu
- 1 pc stone flower / kallu hoovu, optional
- 1 tsp Poppy seeds / Khus Khus / gasgase, optional
- 1/2 tsp Coriander /Dhania seeds
- 1/2 handful Pudina / Mint leaves
- few sprigs Coriander leaves
Instructions
- Wash and soak rice for about 15 to 30 minutes. soak khus khus for 15-20 minutes
- Meanwhile, prepare Masala. Add all the ingredients mentioned under " Ingredients for grinding " to a mixer one by one.
- Add around 1/4 cup water and grind to a smooth paste. Set aside.
- Heat oil in a pressure cooker and add bay leaf, jeera and saunf.
- Then add sliced onions. Saute till transparent.
- Next, add the tomato pieces and saute till mushy.
- Add all the veggies. Saute for a minute.
- Add the ground masala paste. Saute for 2-3 minutes.
- Let the raw smell from the masala go. This step is very important.
- Then drain and add the soaked rice. saute for 1-2 min.
- Add 2 cup water ie 1: 2 proportion including that used for grinding masala. Add salt to taste and squeeze lime. Mix and bring to boil. Taste test. The water should be slightly salty and spicy. Once pulao cooks, it will be perfect. Pressure cook for 2 whistles.
- Open the cooker only after pressure is released completely. Fluff the rice gently with a fork.
- Vegetable Pulao is ready. Serve with onion Raita or cucumber raita.
