Crispy and thin, they taste awesome. I make this dosa often for breakfast/dinner. Can be put together for breakfast in less than 20 minutes. Addition of Rice flour is optional but adding it makes dosa crisp.
The main requirement for this dosa is patience as we have to cook dosa on low medium flame.. only then it will come out crispy !
Rava dosa recipe with step by step photos
- To a mixing bowl add 1 cup Rava ( sooji) , 1 cup Rice Flour , 1/2 cup wheat flour, salt, 1/2 tsp jeera, and few crushed pepper
- To the flour add finely chopped green chilli, Ginger , few curry leaves, chopped coriander leaves, grated carrot.
- Add 1/2 cup butter milk/ curd and 1 cup water.
- Combine everything such that there’s no lump. Let the batter sit for 10 mins.
- After 10 mins, check the batter consistency. you will observe that, after resting the batter would have turned little thicker. Add a cup of water, If required and make thin watery runny batter.
- Heat tawa. Drizzle oil, spread using Onion tip. Sprinkle Onion on the tawa .
- Once the tawa is really hot , splash a ladle full of dosa batter in a circular motion. Start pouring the batter from the outside rim of tawa to inwards centre of tawa. As the batter is thin, it will become lacy. Stir batter really well , before you pour the batter . Smear a few drops of oil around the dosa.
- Lid the pan and cook it on a low flame. Cook till bottom side starts to turn golden brown. Once it becomes crisp, just fold and serve. No need to flip .Don’t cook on high flame… else it won’t turn crisp.
- Remove from tawa and serve hot rava dosa with chutney/chutney powder or sambar or kurma.
Few simple points to note while making this recipe :
- Rubbing tawa with onion helps in removing dosa easily without sticking.
- You can add some chopped onions to the hot Tawa while pouring batter.
- If you are a beginner you could find it little difficult to make thin crisp lacy dosas. Also, it could happen that you might find it a little difficult to remove the dosa, as it might be sticking to the Tawa. Those people can start with making the batter moderately thin and not runny thin. That way dosas won’t come lacy and crisp. It will be soft and easy to handle. Don’t worry once you start getting a hold on it you can start making the batter thinner and relish crispy crunchy dosas.
- Stir batter really well , before you pour the batter on the tawa .
- If using iron Tawa, pour the dough when it is very hot. You will get a nice lace texture. If using non-stick Tawa, pour when medium hot. And for both cook in medium-low flame. that way they will become crisp.
- Do not skip crushed pepper.. it makes the dosa very tasty 😋
- To make a vegan version, you can skip buttermilk.
