Aloo gobi is a popular Indian side dish in which potatoes and cauliflower are cooked with onions, tomatoes and basic Indian spices. There are many versions of making Aloo Gobi and today’s version is simple dry version home style . There are 3-4 ways in which I make aloo gobi , will share them over the time .
This recipe hardly takes 15 -20 mins from chopping the veggies to serving. Tastes so good with some phulkas on side or rice . perfect for a weekday meal / lunch box.
How to do Aloo Gobi
- Take fresh cauliflower . Clean , dice them to bite size pieces , blanch ( put the florets into hot salt water , keep for 5 mins ) and drain . Blanching the cauliflower florets in some hot salt water helps in getting rid of the worms, if any.
- Peel and dice potatoes . Keep in water till ready to use , to avoid dis coloration .
- Take a thick bottom pan / kadai . Heat oil . Add a tsp of cumin seeds , and a big pinch of asafoetida . Splutter cumin seeds.
- Later add a chopped onion , tsp ginger garlic paste and 2-3 chopped green chillies . Sauté for 1-2 mins . Let the raw smell go and onion turn translucent .
- Later, add diced potatoes and Cauliflower to the pan. Drain both the veggies from water before adding . Saute for 3-4 mins. Let the aloo gobi get roasted a bit and aromatic . You can see few brown spots on aloo gobi.
- Time to add all the dry spices one by one ie salt to taste , tsp red chilli , tsp haldi , tsp dhania powder . Combine everything well .
- Cover and cook on medium flame . Toss in between . If you feel masala is sticking to the pan , Sprinkle a splash of water if required . But make sure not to add too much water as it will make gobi soggy and won’t taste that great.
- After about 8 mins , check if veggies are cooked . They should be cooked soft , yet firm & retain shape .
- Add finely chopped tomatoes , 1/2 tsp garam masala powder , 1/2 tsp kitchen king masala and finely chopped coriander leaves. Taste test and continue cooking for another 2-3 mins . Soft cooked potatoes and slightly crunchy gobi.
- Aloo Gobhi .. is ready to serve. Enjoy it with roti / rice .

Few Points to note
- Pick fresh firm cauliflower and clean them nicely .
- When dicing , keep potato size little smaller than cauliflower florets as cook time of potato is more than gobi . Dicing them small and big , will take care that both the veggies are cooked perfect.
- Ratio of aloo : Gobi used in this dish purely depends on your choice . If you like more potatoes add more aloo and less gobi or you could use both the veggies equal .
- For variation you could add some fresh peas too .. to make aloo gobi matar .
- For more flavors you could use a tsp of kasoori methi , amchoor powder for some tang.
- If you don’t have kitchen king masala , you could add little pav bhaji masala / maggi masala
Aloo Gobi
Ingredients
- 1 no Cauliflower / Gobhi , cleaned & diced
- 2-3 nos Potato / Aloo
- 3-4 tbsp Oil
- 1 tsp Jeera / Cumin seeds
- big pinch Hing / Asafoetida
- 1 no Onion , chopped
- 2-3 nos Green Chilli
- 1 tsp Ginger garlic paste
- 1 tsp Red Chili powder
- 1 tsp Turmeric /Haldi powder
- 1 tsp Dhania powder / coriander powder
- 1/2 tsp Garam masala powder
- 1/2 tsp Kitchen King masala
- 1 no Tomato
- salt to taste
- Coriander leaves
Instructions
