Sambar is a staple and comforting dish in South India that’s usually served with idli, dosa, uttappa ,rice etc. One can make Sambar with various vegetables such as Ash gourd , brinjal , drumsticks, pumpkin, potato, etc, . But for today the chosen veggie is Bhindi .

Ladies Finger is one of those vegetables that you either love or hate. Thankfully in my home we all love this veggie. So any dish made out of bhindi gets vanished in no time and this Bhindi Sambar is one such. Tastes so good when paired with steaming hot rice, topped with little ghee 👌👌

There are several ways one can make sambar , and it varies from region to region. Even in Karnataka , there are couple of ways one can make Bendekayi Huli. Using Sambar powder is one easy quick way , making masala by freshly roasting and grinding them later is one authentic way ,bolu huli or koddel another authentic recipe from South Canara which i will share some time .

But today let’s see how to make easy version of Bhindi sambar using Sambar powder .

Bhindi Sambar recipe with step by step photos :

  • Clean and pat dry ladies finger with a clean kitchen towel. Cut into 1 inch pieces.
  • In a pan, heat 1-2 tsp oil . Add chopped okra. Roast bhindi nicely in oil on medium flame to prevent sliminess .This makes bhindi more flavorful. Stir occasionally in between to avoid burning. Once the bhindis , are well roasted , keep them aside .
  • Meanwhile , rinse 1/2-3/4 cup tuvar dal . Add 1/4 tsp of Turmeric to it. Add sufficient water and cook in a pressure cooker for 4 whistles.
  • Mash the cooked lentils with a spoon and keep it aside.
  • Prepare Masala . To a mixer grinder , add fresh coconut , add sambar powder , tamarind , jaggery , salt and haldi . Add little water and grind to a smooth paste
  • Masala for sambar is ready .
  • To a vessel , add roasted Bhindi , the ground paste and the cooked Toor Dal . Combine well.
  • Add sufficient water to make it to proper consistency. Taste test .
  • Add Curry Leaves and boil this for about 6-7 minutes. Switch off the flame.
  • Prepare a tempering . Heat oil and splutter mustard . Pour it over Sambar
  • Bendekayi sambar is ready . Serve this Bendekai Huli with plain hot rice.

Points to note while making Bhindi Sambar

  • Use fresh , tender bhindi only . Over ripe bhindi will be fibrous and won’t taste good.
  •  Wash and spread bhindi nicely on paper towel / cloth for some time before chopping. Let they get dry . If there is water, end result will be slimy.Moisture is what adds to the sliminess . If you have time , it’s better to keep them spread on paper for few hours.
  • Roast bhindi nicely in oil initially on medium flame to prevent sliminess .This makes bhindi more flavorful.
  • Do not skip Coconut .
  • Use fresh Sambar powder for best taste .
  • Adding little jaggery , enhances the taste .
  • I don’t add onion to this sambar . If you want can add .

Ingredients
 

  • 500 gm Bhindi / okra
  • 1/2 -3/4 cup Tuvar Dal ( rinse and cook)
  • few Curry Leaves
  • 1-2 Tsp Oil

To grind ( Masala)

  • 1/4 cup Coconut
  • 2-3 tbsp Sambar powder
  • Amla size Tamarind
  • Tsp Jaggery
  • 1/2 Tsp Turmeric / Haldi
  • Salt to taste

Tempering

  • 2-3 Tsp Oil/Ghee
  • Tsp Mustard

Instructions
