Hardly takes 10-15 mins to make if you have everything prepped up .. one perfect dish if you want to make something quick and special.

Pineapple Fried Rice Recipe with step by step photos :

  • Prep work : Chop all the veggies fine . Peel and dice pineapple . Cook and cool rice , take care not to over cook . Left over rice works great too.
  • In a wok / kadai heat 2-3 tbsp oil on medium heat. When oil is hot ,add tsp of finely chopped garlic. Sauté garlic till slight crisp. Add 1 big sliced onion, 2-3 finely chopped green chilli and tsp finely chopped /grated ginger. Sauté for 1-2 minutes.
  • Add beans, carrots, peas or veggies of your choice . Add a tsp of salt and tsp of sugar . Addition of tsp of sugar helps in retaining color . Cook for 1-2 minutes on high heat. The veggies should remain crunchy.
  • Add diced pineapple. Sauté a min
  • Add chopped cabbage and capsicum. Saute a min . Sauté all the veggies on high flame.Maintain crunchiness of veggies.
  • Add pepper powder, soya sauce, chilli sauce… Combine everything. If using Thai curry powder , add at this stage.
  • Add precooked cooled rice . Combine everything on high flame. .
  • Lastly garnish with few roasted peanuts and spring onions.

Few Points to note while making Pineapple fried rice :

  • You can use any rice like brown / white rice / sonamasoori / basmati / jasmine etc for this. However authentic thai style uses jasmine rice.
  • Remember to cook rice such that grains are separate and not mushy . You can use leftover rice too.
  • Saute the veggies on high flame for 1-2 mins only to maintain the crunchiness .
  • You can use either fresh or canned pineapple.
  • You can use veggies of your choice like beans , carrot , peas , capsicum etc
  • You can use a tsp of thai curry powder for more flavors.
  • Addition of roasted peanuts is optional , however I would recommend not to skip . Gives a nice crunch.
  • Adding a tsp of sugar while sautéing veggies helps in retaining nice color .

Ingredients
 

  • 3 cups Cooked Rice
  • 1 cup Pine apple, diced
  • 2-4 tbsp Oil
  • tsp Garlic, finely chopped
  • 1 big Onion , sliced
  • tsp Ginger, grated / chopped
  • 2-4 nos Green Chilli, chopped
  • 1 cup mixed veggies, beans , carrot , peas etc
  • no Capsicum, sliced
  • 1/2 cup Cabbage, shredded
  • tsp Sugar
  • 1 tsp pepper powder, can +/- based on your preference
  • 2 tsp soya sauce
  • tsp Chilli sauce
  • Salt to taste
  • 2-3 tbsp roasted peanuts, to garnish
  • spring onion , to garnish

Instructions
 

  • Chop all the veggies fine . Peel and dice pineapple . Cook and cool rice.
  • In a wok , heat 2-3 tbsp oil on medium heat. When oil is hot ,Sauté finely chopped garlic in hot oil till slight crisp . Add sliced onion, green chilli and finely chopped ginger . Sauté 1-2 mins .
  • Add finely chopped veggies of your choice.. like beans, carrot, peas, corn etc. Add salt and Little sugar ( retains veggies colour) .Sauté 1-2 mins .
  • Add diced pineapple. Saute a min
  • Add chopped cabbage and capsicum. Sauté a min .
  • Sauté all the veggies on high flame. Maintain crunchiness of veggies.
  • Add pepper powder, soya sauce, chilli sauce… Combine everything.
  • Add precooked cooled rice Combine everything on high flame.
  • Lastly garnish with few roasted peanuts and spring onions.
  • Enjoy pineapple fried rice hot
