Ulundogare aka Urad dal Rice – made with just few basic freshly roasted spices ..its so easy to make , tasty to taste and healthy too . Since it’s a no onion garlic dish , one can make for festival too . The addition of crunchy papad at the end, trust me and try ,so so delicious.

About Ulundogare

Ulundogare is a very traditional age old dish ..that not many people know !! I learnt this recipe from my mom who in turn learnt it from one neighbor belonging to Iyengar community . 

Made with just few basic freshly roasted spices like urad dal , pepper, its so easy to make , tasty to taste and healthy too . Since it’s a no onion garlic dish , one can make for festival too . We can pack for lunch box also . The addition of crunchy papad at the end ..trust me and try …so so delicious !!!

Ulundogare recipe with step by step photos :

  • Wash rice and cook it in the proportion 1: 2.5 ie 1 glass rice 2.5 glass water. The cooked rice grains should be separate, not mushy. Once cooked, spread the cooked rice on a wide plate. This will make the grains separate further & also helps to cool quickly. Allow the rice to cool completely.
  • To a pan add 2 tbsp Urad Dal , 1/2 – 1 tbsp Black Pepper, 1-2 No Red Chilli , 1/2 tsp Jeera / Cumin seeds and Few Curry leaves . Dry roast till they are crisp and changes color. You can feel the aroma of the freshly roasted masala .
  • Allow the roasted spices to cool a bit and powder .
  • To the same pan , add heat Oil + Ghee .
  • Once its hot , add tsp of mustard and urad dal . Let it splutter .Later add few cashew pieces , fry till golden . Next add few Curry leaves and pinch of hing . Saute few seconds .
  • To the tempering , add the freshly ground Masala powder ,
  • 2-3 tbsp grated kopra and salt .
  • Fry for 1-2 mins.
  • Add Cooked cooled rice to it . Squeeze lime . Mix well
  • Allow the ulundogare to sit for some time . Let the flavors blend well .
  • Just before serving , you can crush few urad papad to the rice ,give a quick mix and serve immediately .
  • Tasty & Easy Ulundogare is ready to serve. Serve at room temperature as such or chutney / curd .!!

Points to note :

  • Similarly you can do methi rice .. tastes really good . I have shared the recipe here
  • You can use any urad dal of your choice , split or full. Black urad takes little longer time to roast.
  • Usage of ghee is preferred for this recipe as it gives a nice taste .

Ingredients
 

  • 2 cup Rice, Cooked and Cooled
  • 2-3 tbsp Dry Coconut / Kopra
  • Lemon, optional
  • Salt To taste

Masala ingredients

  • 2 tbsp Urad Dal
  • 1/2 – 1 tbsp Black Pepper
  • 1-2 No Red Chilli
  • 1/2 tsp Jeera / Cumin seeds
  • Few Curry leaves

To Temper

  • 2 – 3  tbsps  Ghee + Oil
  • 1 tsp Mustard
  • 1 tsp Urad Dal
  • few Cashew
  • Few Curry Leaves
  • pinch Hing
