About Ragi Milk :

Scorching summer is just round the corner …Cooling body naturally with natural cooling food is the best way to beat the summer heat. So today i have for you all a refreshing , soothing and a very healthy summer cooler “Ragi Milk / Ragi Juice ” … a traditional age old drink from Karnataka , popularly known as ” Ragi Halu ” locally.

During summer .. a glass of ragi milk is so refreshing…instant energy drink. It’s very good for kids , ladies , for diabetic , natural body cooler … in fact very healthy for any age groups. Calcium rich , iron rich , potassium rich , diet friendly , diabetic friendly and there are many more health benefits in this single glass of ragi milk.

As the name suggests .. Ragi . Finger millet is the star ingredient of this juice . This is very apt to cool your body naturally during summer . With no artificial color / preservatives .. any day best than the sodas and ready store bought juices .

Today’s recipe Ragi Milk is one such very traditional South Karnataka / Udupi dish which our granny’s have been making from many years . As guessed, this traditional recipe is passed to me from my mom. Do try this healthy proteinaceous drink .. i am sure you would love it .. here you go …

Ragi Milk recipe with step by step photos :

  • To begin with , add 1 cup of ragi into a bowl .
  • Wash nicely in water. There will be lots of dust particles, stone in ragi. So it’s better to wash ragi nicely 2-3 times , by scrubbing it with your hand , discard the water.
  • After ragi is washed well , add 6-7 almonds , 2 cups water and soak it minimum for 2-3 hours .
  • Drain the water and transfer the soaked ragi into a mixer jar. Add 1/4 cup fresh coconut , 2-3 cardamom.
  • Add 1 cup water .Grind it really smooth.
  • Filter the ground Ragi using a strainer. Use a spoon or laddle . Press the puree nicely using a back of a laddle to extract the juice nicely
  • Transfer the leftover ragi paste collected in the sieve back to the mixer jar.
  • Add a cup of water and blend smooth. Filter it again neatly like we did before
  • Like this , transfer the left over extract , add water grind smooth . Repeat the steps 2-3 times , till you try to extract almost all the juice from the ground ragi paste
  • If you observe , ragi milk collected initially will be of thick consistency. Later as you keep adding water and grinding the consistency will get thinner.
  • After filtering ragi milk almost 3 times , this is the ragi extract that’s leftover at last. If you observe this is mainly ragi skin. Almost all the juice from the ground ragi paste has been extracted
  • Now Sugar less ragi milk is ready , add jaggery according to your preference and mix well. I have added here 1/2 cup jaggery
  • Dissolve jaggery nicely. Adjust the consistency of ragi milk if required by adding little water. You could alter the water quantity and jaggery quantity based on your preference as in how sweet you like or how thick you want
  • That’s it , super healthy and very nutritious ragi milk is ready .You could serve as such or keep in fridge and serve chilled . tastes more tasty and soothing

Few points to note :

  • If we soak ragi well , it gets soft and is easy to grind. also the quantity of milk increases as ragi is well soaked . So ,you must soak ragi for minimum 2-3 hours , even if more , better .
  • Addition of Badam is actually optional , but tastes more good when we add.
  • Addition of coconut enhances the taste. It is added in the traditional method , if you don’t want , you can skip .
  • Using 1 cup ragi we can extract almost 1.5 l of ragi juice . You can easily serve this quantity to 7-8 people. if there are only 2 people in your family , you could reduce the ragi quantity. or can make once , keep in fridge for 2-3 days and enjoy as and when required.
  • Don’t make the drink too thick.
